I just use my regular mac & cheese recipe (white sauce, add cheddar and mix with cooked mac) and adjust the timing based on the temperature of the smoker. this recipe is pretty close to what I do (I don't measure) Fannie Farmer's Classic Baked Macaroni And Cheese Recipe - Food.com - 135350
