I have always cooked Tri Tip with a sear, but decided to try BP's method with no sear, and it was better than any I have cooked before.
Picked up a couple of choice Tri Tips at Costco. Seasoned one with Susie Q's Santa Maria style seasoning and one with BPS LLw/P and Double Secret.
On the Mak at 250-275°F:
Flipped at IT of 110°F:
Pulled at IT of 143-145°F and let it rest for 20 minutes:
Sliced up (this is the one with BPS LLw/P and Double Secret):
All plated up:
I will do my tri tips this way from now on!
