Vac pak ribs

Have not read anything about this on the forums. I use food saver vac bags for alot of my meats. I decided to apply my rub tonight and vac bag the baby backs for cooking tomorrow. Is this a bad thing?

What you did was a good thing! Plus after cooking ill vac pack the slab to those I'm giving them to.

What I would recommend is to make an experiment out of it. Along with your overnight marinated rack, cook a rack that you rubbed right before you put them both on. That way you'll have a side by side comparison to determine how you treat your future racks.
Personally, I think racks that are marinated overnight tend to taste more like the marinade than they do pork. I prefer to rub then throw on the smoker. The fun of the journey is to find what works best for you.
Experiment often and keep a cook log to record every detail.

That is exactly what we do for comps..and in the morning I hit em with another rub and put them on..works great and I think it helps tenderize them
