Venison Bacon

This venison bacon is basically a 3 day deal; it is better than bacon, but different. We have used beef, buffalo, venison, antelope and elk; all taste great!

Seasoning can be found online if you think you may like to try making this.

Day 1

Here are pic's of the meat being ground, seasonings mixed in and have it loafed up for a nights stay in the fridge; this is a 36 lb. batch.

Day 2

Here is a pic of the loaves taken out of the pans, on the smoker racks just prior to putting them in the smoker.



After the smoke, loafs of meat are brought inside, then we let them cool down to near room temp and then put away sealed in a container, in the fridge overnight to chill.

Day Three

Here are a few pic's of the venison bacon sliced and then packaged.

Really close to the best part now.....

Looks like you and I have the same love of black pepper although I prefer my eggs over easy!! Nice lookin breakfast plate.

Very cool Marty!

I saw something similar to this, only with pork shoulder, a few months ago and was wondering how well this might work with some venison I have in the freezer.

Judging by your pics I'd say it works great!
