If there is an achilles heel it is the thermometer or the probe more specifically...I have tried as many as I can get my hands on. I have the best luck with the Red Oregon Scientific...just wish it had two probes. What's your best solution?
Thermopen I have both the old style and new style and the new ones do read faster. Mine are green to match the inside kitchen decor and blue for outside. Best thing I ever purchased for cooking. When smoking white meat it is nice to know the temp is correct as the meat will come out pink and make you wonder. When the temp is right you know it is done.
