what to do with smoked cheese - sicilian style

kristen's fault - I have been thinking about pizza this week.....

on Sunday I smoked some cheese - cheddar, mozzarella, fresh mozzarella & montery jack with a little oak & apple

early this morning i mixed up a dough and then baked it tonight
dough with a little regular mozz, smoked mozz and some of the fresh mozzarella (look at the color of that smoked cheese - wild)

sauced (crushed san marzano, oregano, garlic, salt & a pinch of sugar) (some grated romano went on right after this picture was taken)

I love pizza with smoked cheese, it gives a whole different flavor.

two slices and I can't move

I love smoked cheese (in case you didn't know from previous posts :rolleyes:).

Hey, try some of the smoked cheddar on a slice of apple pie sometime.

Great looking pizza Deb!

I like to let my smoked cheese age a few months before trying it. It just get's better with age ;)

OOOOH YUMM! I will take the blame for that anytime...wishing I had not told my diner guest we were having Thai food:). Just Kidding I love fixing Thai!

Smoking cheese is on my list as soon as it cools off a little more out here.
