Whew Ribs not so nice... Next???

Ok did the old school 275 for an 1 1/2 hours, 1 1/2 in foil, they came out of the foil just falling apart. Tried to tighten them for 30 to 45 minutes. They didn't turn out good, mushy and falling apart. What next?

What kind of ribs were they? Spares or B backs? How meaty were the ribs? If they were the "light" grade of ribs they would probably cook very fast. Ribs are usually a "timed" kind of cook, but if they are poppin' you need to pull them. Use a toothpick to probe between the bones to test the tenderness - if they are getting done, put them in foil and put back on the smoker, and probe every 20 mins until done. You might drop your temperature down to 250 as well.

A pellet smoker has more convection (hot air flow) going through it than other types of smokers, so it stands to reason that the meat would cook faster than on other smokers styles.

What do you do to tighten them? Might have been too long in the foil at that temp.
