Shout Out To ACW3

First off TYVM for the elk.

I put 2 packs through the med plate today.


Ran out of brisket trim so i ground up some pork butt through the fine plate.




Going to cut 1lb 6oz of pork into the elk, mix tonight and stuff tomorrow.


Might as well grind all the butt and bag for next time.

Got the cut in of the pork, season in and mixed.
Kinda late today for stuffing and smoke so will do tomorrow. I might do a pound of sticks on #48

I got the elk stuffed into sticks and going to use a cold smoke with some pellets.

The smoke generator is inside my LilTex

Cover on so the pellets dont fire up.

Lookin' good!!! Be sure to save me a taste for the June get-together. I am currently in Bar Harbor, ME. Eating way too much lobstah. It is truly wonderful. Rich, but wonderful.

Them is good Maine Lobsters.

Here are the elk sticks getting happy.


While the sticks were smoking i decided to steam up some eggs.



Steaming eggs almost eliminates the gray around the yolk that you get from broiling.



I broke a stick egg so had to put it on the bacon hanger. While the sticks are blooming i had pellets left in the cold smoker so i peeled the eggs and hit em with smoke.





Made my pickle brine and added to the cold smoked eggs.



Here are the sticks after blooming, I think the wrinkles give em personality...LOL

sticks look real good partner. i think the wrinkles look good. i love those eggs. i use to get eggs that look like that from Paky's bar on 4th st in eureka in the 70's. we use to go there every night playing pool.

I cut to small lengths and took the round ends off, cut those down and took to my neighbor. He said he dont like elk. Well i guess he does now cuz he ate the whole baggy of ends.
