Baby back ribs

I've cooked a few on my smoker now. 3 rounds to be exact. Just got done with some. Was wondering what to do with the piece of meat that the grain goes longways on the rib rack. It's good meat but it interferes cause the grain is opposite? Anybody have a good way to deal with this other than trimming them down. It maybe I'm just not picking ribs correctly. They are turning out excellent other than that. Thanks all.

I would just eat it personally. If your looking for competition style pretty ribs then you might want to try trimming up some spares.
