Brisket Question

I'd build in a couple hours rest time next time if you can.
I let my butts and briskets rest at least an hour, preferably two or more. When the flat is done I separate it from the point, trim off some of the fat that was between the point and flat then put the trimmed flat back in the foil with defatted jus (minus what I need for the burnt ends) and wrap it back up in the moving blanket and rest a couple hours.
Something else I do from time to time (learned it from BP) is when the flat is done resting I'll put it over coals to give a light sear. Then slice.
