Dry Aging Beef

So there seems to be a few people dry aging with a couple of different methods - I am just wondering if it is worth all of the effort and if it is safe. I am just not sure what to watch out for in the safety arena..

I would say it just as safe as cooking, or not cooking a turkey properly. If you stick to the rules and use quality meat it is safe... People have been doing it for hundreds of years. This is a good place to get started...

Is it worth it? In a word yes! I happen to love the flavor that comes from dry aging. But I know people that don't too... So it seems to be a love it or leave type of thing. You can always go to a good reputable steak house that does their own dry aging to give it a shot before you jump in the deep end. I am not sure what part of the country you are in but these are some the better know steak houses that are known for dry aging...
