Don't know what to call these. It will be Egg Cups for now.
I took a muffin tin and placed about 1/2 inch of frozen hash browns in the bottom. Put in the Memphis Pro at 350 deg. for 15 min., just to get them cooked a little.
Then I took my eggs, shredded cheddar cheese, onions, chopped up ham, and a tablespoon of sour cream and scrambled the mixture.
Poured the mixture into the pre cooked hashbrowns and dressed up with asparagus spears, and mushroom slices. then back onto the grill at 350 deg. for about 18 min.
I also sprinkled a litle blue cheese crumble on the egg cups about half way through the cooking time. I should have added to be sure to spray the muffin pan with a cooking spray at the beginning.
Then carefully remove from the muffin pan for the finished product;.
