"Exotic" Meats...

Has anyone played around with smoking elk, ostrich, bison, etc.? A certain online company has a large variety of different cuts and was wondering if anyone had any tips.

There are a few on here who've smoked Elk & Bison. I have done very little with bison. Bison is basically like a leaner beef.

That's too bad BP, they're missing out. I've never eaten ostrich, but elk and bison are excellent. Both elk and bison are very lean. Would that help convince your family? ? They're both bovines, same as beef.Would this help?
