[Big Poppa]

Good job the Matt! Left Coast getting a big call in Brisket on the two star and 5th overall...We had a very fun but strange cook...long story short 11th overall 4th ribs...my brisket got 15th Im happy with that...need to make a few tweaks. Just missed the money by .002 of a point. Pretty good considering we changed all four of our recipes! WE got the worst score we have ever gotten in chicken....they killed us...We had good color tenderness but I didnt like the sauce we used....(my fault) Joe cooked his same ol same ol pork that usually does well and he got 19th. Cant wait to get back at it!

Caution BBQ can become addictive. How fun was that, it was so great to get to meet you, Jody, and Joe. To tell you the truth I didn't want to go to the awards, boy am I glad my wife made me go. We had good cooks, but we had no frame of reference. You can practice cook, but I don't think you can practice competitions. We avoided distaster twice (thanks Thermapen). The wind never affected the MAKS, What a great grill, Thanks MAKDADDY! We were overwhelmed by the kindness that Big Poppas Smokers extended to us. Congradulations to you and your team on your good showing, especially in ribs (maybe we can exchange recipes). See you in Vegas!

Meat it is always something...you will learn that soon...tables you hit....cities that hate your recipe....WE have never been out of the top third in chicken.... ever....4th this year at the American Royal...like Matt at left coast we can count our chicken with our eyes closed for agood finish....Then you will see the dreaded tiebreaker....lost another one this week.this week they absolutely slaughtered us...we cooked our exact same pork that was good enough for 25th in the whole of kcbs last year and it got 19th....it goes both ways....sometimes you turn in something thinking that you totally blew it and you get first...
That was a very large comp......

 

[Meat Man]

No doubt we have alot to learn, particularly what judges are looking for. We learned one thing this weekend, they don't like kurobuta spares. Some of the best ribs I've done, just not enough heft to them. Johnny was so kind to speak with us, we would have liked to come and take his class that you were offering, just couldn't make the dates work. Hopefully some other time.

yeah we ditched them a long time ago....Let me also tell you and andy and kim may disagree but I believe that judging is way more of a crapshoot the larger the contest... They had to come up with 76 judges that wanted to go to lake havasu...But the thing to remember is that the good cooks at the end of the year are on top and at this contest Harry won and he is always the cream out here even though a lot of people like to throw stones at him...His hint to all is that you stay very safe with your flavors and develop consistency....

Like BP said, and I agree, it is a crapshot when it comes to the judges, especially on the larger contests. Too many variables and personal likes/dislikes, etc. Once you find something that works, and the judges like, stick with it!
