Here is what I whipped up for the dinner last night in Laughlin Nevada for the $100,000
USA BBQ Championships.
Torta is a roll similar to ciabatta. If you cant find torta ciabatta will do but I prefer this wonderful Mexican sandwich roll
Smoke tri tip on MAK one star at 275 to 142 Internal temp
Melt a pan of garlic butter
Make spread
Start with quality mayonnaise and put about a tablespoon or to taste of Big Poppa Smokers Cuckoo Racha rub...this is crazy good dried pepper rub based on Sriracha sauce
When it is to taste add about a tablespoon of honey
slice and dip rolls and then put on the MAK to toast for 5 minutes
spread cuckoo racha sauce and layer with sliced meat
top with cheese and return to mak for about 5 minutes to melt
slice and serve
