Dug some yardbirds out of the freezer. At 69 cents/pound, I had to grab a couple for a rainy day.
Going with Annie's and Williams BBQ rub.
Still kinda frozen. So we'll start around 200° and work up to 300°. Using my 'Flame Zone' pan for a combination of smoking and roasting.
Getting some color. Time to start flip/flopping.
140° - getting closer.
And done.
Foiled and rested a bit, then into the fridge. Gonna vac-seal them to add to my buddy's gift package tomorrow.
