I do not use the heating element when doing cheese.
Just a gagette pan with pellets

I do a lot of cold smoking cheese & sausage and have been looking at the A-Maze-N pellet smokers but I your idea of using the french loaf pan for pellets seems to work really well.

How long of a smoke can you get from one trough of pellets?
