This is an easy, quick smoked snack. I've made this on a gas grill too but this Memphis Pro bread was my favorite.
I scored (sliced) a loaf of olive oil bread. ( dense bread works best)
Fried bacon, then sautéed scallions and garlic in the bacon drippings with 2 Tablespoons of butter added.
Inserted pepperjack and mozzarella cheese into the slits....
Spooned the sautéed onions, garlic and bacon dripping/butter mixture into the slits, then drizzled any remaining on top of the bread..
Into the Memphis Pro covered with foil for the first 20 minutes or so, until heated through. Then remove the foil and let the bread smoke an additional 10 minutes to crisp a bit.
Topped with the crisp fried bacon....
Dove in while the bread was hot and the cheese was nice and gooey...
It's a tasty snack and the combinations are endless as far as the cheese and stuffing goes. I like the slight kick of the pepperjack cheese and you can never go wrong with bacon.
