Pork Fat Rules! Saturday

Haven't had a chance to cook the past month. What better way to break out of the slump than with some Pork Fat!

Started with a couple of Costco Pork Butts and a couple racks of Costco Baby Backs (the fresh ones, not cryopacked). First the butts. Haven't done pulled pork in a while, and I am not very good a logging what I have done in the past. So I turned to BPTV and watched Big Poppa video on pulled pork and followed it.

The ingredients (along with brown sugar):

All seasoned and on #500 at 275°F:

At around 150°F IT and ready to wrap:

Butts foiled and on the MAK with the racks of Baby Backs with Smokin Guns Hot and BPS Sweet Money Rub:

Pork ready to be pulled. I decided to use the cotton gloves under the latex as I always see BP use in his videos to pull instead of the big black rubber gloves. I liked it much better!:

This was real good. Ribs a bit overdone for my liking, but usually do spares and missed the timing on these.
