Prime Rib - what temp and how long?

actually RickB many restaurants cook in alto shams at very low temps...But I have so many threads here on how to cook rib roasts and even a sticky use the search function for some gems! thanks


Thanks for the info Sterling. i had never heard of these before. Given the cost I know why. seems these started out as holding cabinets and went on to cook and hold. Also they are primarly used in very high volume applications. That being said...still dont know why anyone would want to cook at 125 for 24 hrs in a convection oven. :)
