Had a chuck roast laying around so drizzled some Roasted Garlic EVOO and dusted some BPS DS Steak Rub, I know I've said this alot lately but that stuff is AWESOME! Anyways, wrapped her tightly and plastic wrap and let her sit in the fridge for two days.
Threw her on the Traeger set at 225 and let her bask in the beautiful mesquite smoke till she hit 140 IT.
Once she hit 140 IT got a pan prepared with onions, butter, siracha, peppercinis and some their juice, worcestershire sauce, and some red wine then back into the Traeger till 190 IT.
Pulled off the grill at 190 IT and let her sit.
Shredded.
Made some pretty good hot beef sammies.
My apologies for the quality of the photos, my phone is pretty terrible for taking pictures, guess I need to get me a camera some time.
