Finally decided to purchase a Wagyu brisket. Agonized over whether or not to inject, but in the end I decided I wanted to taste what I paid for. So here we go:
The ingrediants: 12.4 lb brisket and BPS Cash Cow:
On smoke (about 180°F) for 1 hour:
Raised to 225°F for a couple of hours, then up to 250°F until the following color was achieved. Then to foil:
Started some Spares with Sweet Money, 3EYZ, and Happy Ending:
Brisket wrapped and probed, ribs on:
Brisket resting and ribs sauced with Swamp Boys Original:
Ribs resting, burnt ends on:
Flat sliced up:
Ribs and brisket plated up:
Now with burnt ends:
This was by far the best brisket I have done. Really good this time!
