Stuffed pork tenderloin

So the wife says I need to start eating healthier types of meat. I love my steaks but lets try to make her happy. I had some nice pork tenderloins I picked up.. her fav but I dont like them.. no matter what I try they come out kinda bland. So lets doctor this baby up!!!

Picked up some artichoke hearts, sundried tomatoes, herb and garlic cream cheese and maple smoked bacon.
Bacon weave naturally...

Mixed up the hearts, tomatoes and some minced garlic

Spread the cream cheese on real thick..

In with the stuffing

Into a comfy blanket..

Gonna smoke for an hour and then 325 for the rest of the ride.....

ok.. weave kinda exploded when i moved it.. DAMN!! Rookie mistake..

Saved the day with some toothpicks kinda.. and into the broiler for a few mins
All ready!!

Sliced up. not as pretty as I would like but man it smells and tastes pretty freakin awsome!!!!!

Gonna work on getting this one right for sure!!!
