sulfer brisket?

Hello everyone....
I picked up a 12 pound prime grade brisket today for an overnight cook. Opened the vacuum sealed package and was greeted with a pretty strong sulfer odor. It did decrease with time, and a rinse, but it is still there. Anyone ever seen this? thanks.

No but I think it is on its way if not already bad. Meat has to smell good to be good. PM meat man he is a butcher..I would not cook it.

Thanks for the reply BP. I called the butcher this morning, he remembered me and the brisket in question. I explained the issue to him. He said this particular brisket was "wet aged" there in his shop for 30 days. He said the gassy odor was caused by the growth of bacteria during the aging process. He states as long as it is cooked over 135 it, it will be fine. I sure hope he's right, cause it's been on the one star since midnight (almost 12 hours,) and it's at about 180 now.....
