Andy, I've never had Spiedini so I looked it up and from what I gather it's Italian style kabobs. Man, that sounds like a great idea for on the grill. What makes them uniquely Italian versus other kabobs? Do you have any pics, suggestions on favorite variations? Please dish up some more details! ;)

The majority of the flavors in my BBQ marinade come from me trying to recreate Felitz's or Gorozzo's Spiedini. So that is the flavor profile... you take that, and then use italian seasoned breadcrumbs (or make your own fresh Italian croutons, then pulverize them!) and a nice Parmigiano-Reggiano or Pecorino Romano blended to dredge in, then grill. Nice toasted exterior, tender flavorful interior. A little work to pound out the chicken, or sirloin, but well worth the effort :)

Garlic-Butter pasta with it, and some marinated grilled zucchini and yellow squash, and you have a killer meal, with low effort.
