I recently purchased a Memphis Pro and in the first 8 days I have made 3 whole chickens, salmon, Chocolate Chip Cookies, Banana Bread, Zucchini Bread, 2 Pizza's, Apple/Pear Crisp, Smoky Tomatillo Salsa and a chicken enchilada dip. All of this for a family of 4! Due to the abundance, we were forced to share, but with much hesitation. For those that love to cook, these grills truly allow you to raise the creativity bar and not heat up the house oven-baking in the summer temps!

The pelletsmoking.com forum played a part in my Pellet Grill research and I am extremely happy with my decision - so thank you!

Welcome BJ! It sounds like when I first got mine.. I think there is almost nothing that can not be cooked on these toys!

Thanks to everyone for the welcome! I'm moving on to smoking this weekend. This will be my first attempt at smoking a Boneless Butt over-night. I figured I would set temp the two 7.5 lbs Butts at 225 and let the MP do the work. The Butts will rubbed 12 - 24 hours using Butt Rub prior to placing in the MP. I'm figuring 1.5 hrs per pound or 11 - 12 hours to bring the Butts to 195 degrees, wrapping in foil at the 165 degree mark. Once completed, I'm going to transfer to a cooler, wrapped in foil and towels for the last hour or two before pulling. Am I missing anything?

Looks like a good plan of attack to me. Don't be surprised if it takes longer than 12 hours though.
