Turkey Cooking Time

Doing the turkey on my new Memphis Advantage this coming Turkey Day and was wondering how long (minutes/pound) doing it at say 275? Not wanting to do a true low & slow smoke (time is a factor) but not a "regular roasting" either.

Thought?

I usually count on it taking approx. 12 - 14 min. per pound if spatchcocking and cooking at 275°. If keeping the turkey whole, cooking times will be the same as if you were roasting in an oven at whatever temp.

I prefer Apple Wood, both for the flavor and chestnut brow color it gives the bird. But cherry is a close second and an apple/hickory or apple/cherry blend are also good.

Temp - I tend to go 275° - 350° depending on how big the bird is. The bigger the bird - the lower the temp to keep it from cooking the outside too quickly and drying it out before the inside is done.

I never go above 275 on the smoker with turkey...really I try to cook it almost the same as I cook a roast.

Yep, I should've clarified that a little better. I might do a small chicken up around 350° but even a chicken as big as 5 lbs I start cutting back on temp. I usually do turkeys around 275°.

275° usually gets the skin done pretty well without turning it to leather.
