Got the typical weekday late afternoon text from my wife, "what do you want for dinner?" not feeling like hitting the store I asked "what do we have?" she replies, "potatoes and some boneless skinless chicken breasts that I need to use", yee hah not much to work with there! Light bulb comes on as I am thinking, how do I make a skinless chicken breast taste good? Smoke it and put it in a baked tater! Here we go-
Season up some breasts with EVOO and Williams fajita seasoning
Onto the MAK running at 250 to join the spuds already on
Flip once halfway through
Chicken ready to go
Slice it up
Put it all together with some butter, sour cream, chives, and cheese and serve with a salad for good measure
This came out awesome, you couldn't even tell that the chicken was a boneless and skinless breast! Great smoky flavor throughout made for an awesome baked tater.
