I know that you guys haven't gotten the Money or the Happy Ending yet...soon grasshopper....soon but I am super excited about my latest that I just approved the final samples...You kids are hearing about it first...(ok I told Spark on a PM)

I'm of the opinion that chipotle has run its course...It's about Jalapeno....So if you were looking for a rub that used jalapeno where do you start? Little Louies with black pepper....first thing I did is take out the red and the paprika...(im not telling exactly what I took out1 Then I reduced the celery and added fine jalapeno powder and actual tiny chucks of dried jalapeno...The first few batches were great as seasoning salt...but it became clear that this needed to be its own and more of a rub so I dropped that salt a bunch and came up with a balance that is really great. Can you say Hallelujah? Can you say Jallelujah? I hope so because that's what I named it! Jallelujah!

Now I'm not done. What is most of our favorite flavors on the smoker. What is good? Bacon. Bacon is good? Bacon is the jelly and jalapeno is the peanut butter. They go together like Sparky and Ribs! SCooter and a clean smoker....love and marriage.....
So I searched out a really great tasting natural bacon powder....it is just bacon reduced to a powder.....so the second of these new rubs is Jallelujah with Bacon!

Ill keep you kids posted! Hopefully I can get these to market sooner than the last ones!

Interesting, I'm still digging the Chipotle and had to work my family into it. Now I gotta get em into the jalapeno.

But for now..... SHOW ME THE MONEY!!! (And the Happy Ending!) I got an order ready to roll.....

BP,
You certainly don't rest on your laurels, do you? You have a knack for putting all these "things" together. Keep up the good work!

Note to self: Start cleaning up the spice shelf to make room for new and exciting additions.

Trent, you're lucky; if you've already got your crew liking chipotles (which are smoked ripened jalapenos), then you're already half way there! My son & I like the spicy stuff, but the wife & daughter... well they like some but not too much.

For those who are wondering what's the difference between a jalapeno pepper and a chipotle pepper, as Tent pointed out, it's simply a ripe smoke-dried jalapeno, sometimes found packed in adobo sauce. In Mexican cuisine, and I'm sure Chilehead will tell you, the same pepper will have different names depending on the way it's processed.
For instance:
take a ripened poblano and dry it and it becomes an ancho chile.
take an unripened poblano and dry it and it becomes a mulato chile
take a chilaca and dry it and it becomes a pasilla chile

And like TTNuge, I still love chipotles but equally love jalapenos!! Not a fan of habaneros yet as they pack too much heat for me.

in speaking of the flavor I was not referring to the origin of the pepper so much as the general flavor... it will have heat.
