I have an elk roast and some wild turkey thighs I would like to smoke. has any one got a good recipe or know if it's good this way or should I stick with just roasting. Recipes for either would be welcome. I have a Treager with temp control

For the turkey thighs I would brine them and smoke. Smoked turkey for snacking is the best!! I have never done just thighs, usually it is a whole turkey. I can't imagine it being much different... hopefully someone else will speak up. Cut the recipe down depending on how many thighs you have.

Slaughterhouse Poultry Brine
1 ½ Gal Water
½ C Salt - Kosher
½ C Dark Brown Sugar
2 tsp Garlic Powder
2 tsp Onion Powder
2 tsp Cajun Spice
2 tsp Celery Seed

Thanks for the recipe ,it sounds good. How much time to smoke? Do you think I could combine the elk roast at the same time?

With the elk roast you need to "lard" it pretty good. It will dry out very quickly if you roast it by itself. Another option would be to braise it in some kind of liquid, like a nice red wine (Merlot comes to mind). You could start with a low and slow approach and smoke it for a while, then put it in a pan with the wine to finish it. Almost pulled elk at that point. Make some pan gravy with the wine and elk juices.

The only other ways I have used my elk roasts are ground up into burger for chili or to make some summer sausage. You could also slice it about 1/4" and make some fine jerky with it, too.

I have done all these. They are all good.

Like I said I have never done just thighs so I would maybe start around 275 - probably take 2-3 hours. Be sure to go by internal temp on the thigh meat to check to see when it is done.
