Big Momma smokes some butts

My wife, daughter and I took a cooking class together last week. Well little I'd I expect to put out of a job. Our family loves to cook, and my wife has always seemed to have a gift when it comes to recipe development. Many of our most popular items at our butcher shop are things she has come up with over the years. Well today Big Momma (she's always called herself that) decided she was going to cook up a couple of pork butts and compare two different flavor profiles. One we have used in the last two comps, and a new one we learned at the cooking class with a few tweaks.

Not bad for the first time, slightly over done but the improvements to the flavor were great.

wow, looks great. i never seen no one ever but honey, bs and butter on a butt before. how did it taste?

I put a whole cube of butter on mine in the foil stage.

Looks good. Appears very moist with a nice bark. That foiling method is great with ribs. I may need to try that with my next butts I do

Do you think there was any advantage to putting the butts up on the top shelf?I was going to do a butt this weekend and was wondering about which area to put it on.

We've always wrapped our butts, I like the results. Saw Johnny doing the margarine thing on a pitmaster show on his butts a while ago. I really like the FL on our butts. Agave is 10 times sweeter than honey. I always use my upper rack if we are able. Farther from the heat, and there is a lot of smoke swirling around up there.

I use the upper rack too 90 % of the time. I've never tried brown sugar and butter on a butt either..shoot I've never even injected one either lol. I've thought about it though!
That pastrami looks delicious too! Has me drool'n!
