Oh man I was wanting to see some pics! Nice job on the rack holders..I was wondering how you were going to cook all those ribs.

I cooked in two rounds. The flavour was spot on. We nailed that, they just cooked a little too long. The other pellet cooker there won 1st place judges, and 2nd place peoples choice. He just stacked all the racks in like cordwood and hoped for the best. I guess thats why some of his ribs retained moisture.
