A Slab of St. Louis Spares

I trimmed up a slab of spares last night and dusted the slab with Sweet Money, and the rib tips and trimmings with Money...then put them to bed in the fridge to rest overnight.

While the Rec Tec was coming up to temp, I gave them another dusting of rub and spritzed with a little apple juice.





Into the pit...I ran the Rec Tec @ 240*.




About 2 1/2 hours later...ready to apply the crutch.




Back in the smoker...bumping the cooker temp up to 260*




Removed the foil and cooked for about 25 minutes to tighten it up a bit...this shot is just before slicing.




Plated money shot...




Ribs came out great! Really like the Money rub alot.

Nice smoke ring Red and the ribs look really moist. The sides are perfect with those ribs, you can't go wrong with spuds and beans. Thanks for sharing.

Money is just that Sweet or Regular. It is easy to just put it on and cook and you will have a good product. Yours look real nice!
