Does anyone have any advice on cooking things like thinly sliced meats? Meats such as carne asada, or thin cut short ribs on pellet grills. Usually, on a gas or charcoal grill I will keep the lid open to monitor these meats since they cook so rapidly. As I have researched, leaving your lid open is not recommended with pellet grilling. Would you suggest closing the lid and opening it in a few minutes or so to flip the meat? Will leaving the lid open for such a short period of time be that detrimental to the grill/eating up pellets to maintain heat (especially at higher grilling temps)?
