I am looking for a good pair of poultry shears. I have a pair of Wusthoff and Oxo but not impressed. Was looking at a pair of Shun but there were some reviews that worried me. Suggestions? Help me Yoda!
Mine are about 17 years old. Red handle, made in Italy. Got them at Williams Sonoma. No brand stamped on the it. Love them though. They come completely apart for cleaning. Anxious for other opinions.
Rick I love Shun stuff when its new it is so hard of tememred steel it is difficult to sharpen and it gets chips and flaking from the plating. Im using the messermeister and they are pretty good
I second BPs Messermeister suggestion! They are excellent. I help the Smokin' Yankee's with their BBQ catering. Chris makes the best chicken I've ever tasted off his pellet cooker. What's involved is to split whole chickens in two. Sometimes we're splitting 40 to 80 chickens at a time and you need a pair of shears that can not only stand up to that kind abuse but to have shears designed to do most of the work for you. The Messermeister shears are designed to hold onto the bones while you're cutting through poultry so the slippery poultry doesn't slip out and the handles are longer to give you more leverage which makes it easier to cut through the larger bones. They go smoothly through chicken and are very comfortable to hold. I cut the backbone out of 50 chickens and didn't feel it later in my tendons. Works on turkey also.
After agitating my tendonitis and breaking a pair of shears spatchcocking a gagillion chickens I researched them and found Messermeister had the most positive comments and they were also voted the best poultry shears by Cooks Illustrated. They come apart for easy cleaning. IMO, they are the best combination of quality, function and price.

Worked for me as well - and thanks for starting the thread Rick - I need a pair myself. Going to add it to my order for a new frogmat and a little something to spice up my life
Rick, I've been through a bunch of shears, including the Wustoff. The best I have had is the CutCo shears. Super-sharp, easy to use, dishwasher safe. My son cut a penny in half with them (after seeing the rep at a street fair do it) and they still work great.
