I have been stuck on the same apps forever, ABT's, Portabella Mushroom Pizzas, and Bruschetta. Went to some holiday parties and surfed the internet to get some new ideas. Will be trying them over the next couple of weeks. Here is my first shot.
Firecracker shrimp and scallops:
Started by putting some bacon on smoke and then raising to 275°F for a while until cooked, but still very flexible.
Cut in half, and prepared some scallops and shrimp, and had the 3EYZ, Sriracha, and Cholula ready:
Put shrimp on bacon, covered with 3EYZ, then covered with hot sauce (Sriracha or Cholula). Did the same for scallops. Shrimp and Scallops were smaller than desired, so used two per piece of bacon. Will get larger size shrimp and scallops in the future.
Wrapped up in the bacon and secured with a toothpick, and back on the MAK at 325°F:
All done:
These were real good! Should have pulled bacon a little earlier on first part of cook, but still real good. I smoked for 30 min, then about 20 minutes on 275°F. Probably should have smoked for 15 minutes or skipped smoking all together. Experiment and you will get it right!
Next I tried Crab Stuffed Mushrooms.
Dungeness Crab is relatively cheap in the Bay Area this time of year because it is in season ($4.99/lb most places). So I started with a couple whole crabs. Got the meat out and mixed with a few things (green onion, thyme, oregano, pepper, mayo, parmesan).
Stuffed some mushrooms with the mixture and topped with more parmesan cheese. On the MAK at 350°F for about 15 minutes.
All done.
These were much better than I expected. Just got a recipe off the internet and modified to my liking.
Great snacks for a big football day! Enjoy!
