Arrrgh I ate too much this holiday season!

OK 4th day..Ill just tallk dinner....Louies famous Tortilla soup...no tortillas...great and pretty much fat free...Day two SOup again...it was so good I didnt mind
Day three I cooked two spatchcock chickens . At one wquarter of a breast and a low fat caesar...diced the rest and put in the fridge in baggie...then prepped diced onion, red bell pepper, scallions, carrots, celery, and a few other things and put them in a baggie for easy salads...Had a great one with a healthy low fat balsamic last night and it was not like dieting....Fish tonight.

i have spatchcock chicken in my fridge as well as all kinds of cut up veggies. If the veggies are prepped I'll eat them for snacks as well as use them for dinner prep

yesterday was salad with a little chic on it. Last night did a quick stir fry using a bunch of veggies threw some of the chicken in at the end, served with brown rice......

oatmeal in microwave right now with a tiny bit of diced crystallized ginger and a few dried cranberries.

we need little louies soup recipe!

My favorite use for leftovers, Veggie Soup!

1 can tomato soup
beef (steak, prime rib, brisket) (measuring isn't important)
frozen mixed veggies with corn
frozen okra
green beans
zuccini sliced
onion chopped
4-5 yukon gold taters
shredded cabbage
parsley

Toss everything in a big pot. Add about 4-5 soup cans of water. Bring to a boil, turn down to simmer. Add seasonings (salt, pepper, garlic, chili powder, Louie's Double Pepper stuff. I use frozen leftover bits of beef and cut them up (or off the bone) after they "melt" in the simmering soup. Soup's done when the taters are tender and the zuccini is cooked.

For those smart phone users there is a free app, MY FITNESS PAL, its great! Gave me a calorie target based on my weight & age. Then you log your meals (everything I have entered is in their system so far), even track exercise. Fresh & Easy is great! I have a couple of Thai soups & a salad I can post recipes of if anyone is interested. I lived in Thailand and got to go to cooking school as I was teaching the owners English:).

fails are good for us....I am not bragging but I dont have many these days...(thanks to the pellet cookers) but my most embarrassing fail was cooking dinner for Chris Lilly. arrrrgghhhhhh maynard....I did a crown roast of pork in a blackberry sauce and used a cooker for the first time and half was [perfect ad the other half was sushi...I made up for it the next night I still am haunted by that....

it was a recipe fail , I should have paid more attention, I can see it would fail and could fix it is I liked the flavors enough, which I didn't

Real simple (and light) leftovers..

Smoked a "smoked" sliced ham on NYE.

We didn't eat any of it, so it sat in the fridge for a few days.

Break out some Hurst 15 bean soup mix. Rinse/soak for about 30 minutes, then into the pressure cooker with a can of Rotel tomatoes and some low sodium beef stock.

Chopped some ham and toss it all in the fridge overnight to get happy.

Last night, break out the 'well used' Le Creuset.

Reconstitute the bean mix with some more water, simmer, and let it hang out on low for a while.

Recipe for Tom Kha Gai (chicken in coconut milk soup)

2 cps Low Sodium Chicken Broth ( I like Sprouts organic)
1 can coconut milk
8-10 peeled slices of ginger
1 stalk lemongrass, cut in 2 inch pieces
3 Serrano chilies, cut & remove seeds, diced
3 boneless, skinless chicken breasts (cut in 3-4 inch pieces)
2 tomato (large chunks)
1 white onion ( large chunks)
1 clove garlic
1cp mushrooms
3 tblsp lime juice
3 tblsp fish sauce
2 tblsp brown sugar

Garnish with cilantro & fresh basil leaves.

Combine broth, coconut milk, lemongrass, and ginger in medium pot & bring to a boil. Add chicken & diced Serrano chili. Reduce heat once chicken is opaque. Add garlic, lime juice, fish sauce, mushroom, and onion. Simmer for 10-15 minutes, add brown sugar and taste. I add more lime juice, and fish sauce if it is too mild. Chili Oil is also a great way to spice it up!
Serve with Jasmine rice!
