This is a basic Cobbler recipe that my Grandmother gave me, it calls for blueberries but you can substitute other fruits and make it your own, I do it with peaches quite often as well, also add in a little cinnamon and you can make a nice apple cobbler too. The secret in this recipe is the crumble.
FILLING:
6 cups fresh-picked blueberries
1 cup fresh peaches, diced into 1/2" pieces
1/2 cup white sugar
1/4 cup flour
1 tsp grated lemon zest
2 T fresh lemon juice
CRUMBLE:
1 1/2 cups flour
1/4 tsp salt
1/3 cup white sugar
1/3 cup brown sugar
3/4 cup CHILLED butter, cut into 1/2" thick slices
Make the crumble breaking down the butter into smaller pieces with a fork (I use a pastry blender for this) let chill until mixture is crumbly. Make the filling and pour into a large cast iron skillet or baking dish.
Bake around 45 minutes at 375-400 or until top is lightly browned. Don't get the top too brown as it will continue to brown after it is removed. Serve warm.
