I love the combination of beef and barley. Usually I have it in stew or soup but this works for me too.
I use thin slices of beef, lay them out to make one "sheet" of meat.
I top the meat with barley that has been cooked in beef stock. Then I season with cracked black pepper. (the stock usually adds enough salt)... and then I top with scallions.
I roll... tucking in the edges as I roll, and then tie them..
this time I used indirect heat on the grill and added my pellets to the hot side...
I baste with butter to keep them moist..
I bring them up to an internal temp of 165F.
They're different but kinda tasty.
