Inspired by Chili's thread I put three kinds of brats on the smoker today: Salsiccia, Thuringer Bratwurst and Merguez. I seared them in a cast iron skillet, added some onions and filled up with beer. After simmering over indirect heat with apple wood for some time I seared the brats over direct heat and served it with the onions and the beer sauce on shortly seared tortillas.
