Birthday Ribs - My favorite way!

It's Wednesday (my B'Day). The wife's working until 8, the kids left to go to youth group. Nobody's home to tell me what to cook. It's just me, the cat, the dog... and a rack of Spareribs! ;)

Ribs are on catching some hickory smoke.

Hmmm... What flavor profile do I want? Oh yeah... "Spicy Sweet Onion & Peach Bourbon Ribs"

Time to foil with a couple gurgles of Bourbon & cider vinegar...

Top with sweet onion, peach slices, a sprinkle of red pepper flakes & some brown sugar.

don't waste those foil juices... into a food processor with the peaches, onions & some homemade BBQ sauce.

When the family gets home, we eat, I take my first bite... Happy Birthday to me!

Do you see a big difference using the water pan?

Depending on weather conditions, yes. When its super humid outside I don't see as much of a difference, because there's plenty of moisture in the air already. I'm a firm believer in using a water pan in any grill for low & slow things like ribs, pork shoulder, brisket, etc.
