OK I only cooked the brisket using pellets...but when you have a few slices left over here you go
Started with Maui onions with big poppa's new Jalalujah rub (not out yet...soon)

Grill them on the panini machine

little horseradish on one side and honey mustard on the other

layer with swiss cheese and tomato and the onion

Now you can use your smoker as a panini machine....take grill grates and put the sammy on it and then put the other grill grate grate side down on top of the sammy and put bricks to put pressure on it.....

Nice Sammie BP! I've thought of doing this myself when my press quit on me.

I'm waiting patiently for the jalapeño season salt too.

Yet another use for a pannini maker!! Grilled onions, cinnamon buns, and even sandwiches!! Love it!!

I think could just pull a chair up to that sandwich and be quite happy. And those thick slices of grilled onions just absolutely perfect it.
