D dpom New member Jun 14, 2013 #1 I just bought a 16 3/4 lb brisket. it will be the first one i've done. If I use the BP recipe at 275,what i a guesstimated time it will take?

W wneill20 New member Jun 14, 2013 #2 I do 12 lb in six hours on my drum smoker at that temp. I would guess 7 hours plus a couple to rest.
D dpom New member Jun 14, 2013 #3 thanks I'll be cooking it on a MAK 2 star if that makes any difference on the time
W wneill20 New member Jun 14, 2013 #4 It shouldn't just keep and eye on it at the end of the cook as it will come up to temp fast. When you pull it if you are warping in foil open it up and let it vent for 10 minutes so it will stop cooking then wrap it back up and let rest.
