Christmas Ribs But need a little help Sparky

I am in charge of making Christmas ribs this year, plan on doing 9 slabs of BB Ribs

I usually do the 3-2-1 method at 250° but the ribs seem to be too falling off the bone and almost mushy

So Sparky care to give me a little advise on the perfect ribs, I believe the correct temp to be 275° But am I giving them a little to long in the "love" ?

2 hours @ 275 then some FL for 1 hour. unwrap and let go until toothpick goes threw like butter. for sauced ones 3 hours flipping every hour then sauce on bone side for 15 minutes then flip and sauce on meat side for 1/2 hour or so. toothpick test again.

Did the 2 hours then the 1 hr of FL and they were done !! Nice ....Thanks

I took the FL Juice reduced a little, chilled, removed fat cap, used for a sauce on the ribs .. OH MY GOSH was that good
