Cold Smoking Work Around

Needed some smoked cheese for a dish this weekend and was doing a little experimenting. Tried unplugging the auger and hotrod on the Mak2 and putting the tube smoker in the main chamber. Was getting about 92 degrees with a ambient temp of 56. Too high. Tried putting everything back together and tried this.

Tube smoker in the right side of smoke box

Blocked off the right side vent with a mag stickie

Mak 2 off and as we all know warm smoke rises. The tube is below the main cooking chamber. This is what ya get.

Very small temp rise. Perfect for cold smoking.

Give it a try.

Nice work around to get the temps you need!

As I was reading I was going to suggest a bowl of ice to keep the cook chamber temps down, as I read on I saw you conquered the problem.

Not only that but having the main chamber avail for smoking with the upper rack you can smoke a potload of cheese.
