I would start earlier. My butts always seem to take 12 to 14 hours to cook and then there is cooler time of at least 1 or 2 hours. Time to pull it too. Just saying.

I am talking no fl on the first cook. Still thinkng 14hours for a 7lb? 195 to 200? 2 hrs cambrea and pull?

How long do you lay out prior to pit time?

I like to put pork shoulders on the pit while they're still cold. Why? Because the longer the outside of the meat takes to reach 140° the more smoke penetration and the deeper the smoke ring can develop. But it's preference.
