The wife wanted spatchcocked chicken tonight so what she asks for she will receive.
For me I made ABT's with cream cheese and soileaus seasoning. I also made some Armadillo eggs with hot chorizo.
First off I prepped the chicken with some garlic EVOO and desert gold.
Put the chicken on the MAK using oak and set it to smoke for an hour.
While the chicken was basking in the smoke I put the ABT's and armadillo eggs together.
I cored and stuffed some jalapeños with the cream cheese and
Wrapped some with the hot chorizo and the rest with some bacon. The armadillo eggs had awesome flavor but the chorizo didn't hold up as well as I hoped.
I also made for the first time a potato and asparagus tart with FILO dough,potatoes , asparagus,white cheddar, nutmeg, salt and pepper, butter, and eggs.
