Do any of you have a Nemesis?

I'm not talking about the jealous neighbor who has to smell the wonderful scents coming from your smoker over to his house........

I'm wondering -

1) Is there one thing(s) that you are too intimidated to try on your smoker?

or

2) Is there that one thing you cook, and no matter what, you are never happy with the results?

2 - bagels, never happy with how they come out but I have never tried them on the pellet grill . Maybe that's the problem;)

1 - there is nothing I'm afraid of throwing on the pellet grill

Prior to pellet smoking, it was ribs. Kept me from getting serious about smoking for years....with a pellet smoker and some coaching from posts by Bear and Sparky....say it with me ppl, waa la! Immediate success!

Fudge.

All the other candies I have done well, (atomic peanut brittle comes to mind) but fudge....

With the humidity down here, smooth evades me. Grainy every time. I gave up and moved on. It has become a family joke. "He cures his own bacon, but that fudge..."

I'm afraid of brisket, not so much that I can't cook it, but more so that I will go through the whole process of burning a bunch of pellets and time only to realize that I would have been much happier with a tri tip! Thankfully no one has requested that I cook one for them so I have been able to avoid this BBQ standard (knock on wood).

I fear nothing on four legs or two wings.... :)

Only problem is getting my brisket consistent from one try to the next. Of course consistency suffers when you keep changing parameters of flavor profile and/or cook process...

Spark, I thought your nemesis was walking past the meat counter and not grabbing a rack or two of ribs!

my 24 year old daughter. she's da devil. she be some voodoo child. when she gets her cockles in a bunch. watch out ppl. it's not pretty. when this happens i make her some pig candy. she loves it. it calms her when she has a pound of it in her lap. it is best to stay out of her way.... :(

After seeing Deb's great looking apple pie, I have to admit that baking on my grill is probably my nemesis. I don't even try to bake anything very often in the house oven, much less on my MAK. One more thing to work on.
