Notice that those great looking Butts are elevated with a couple of racks. Could you enlighten me with the reasoning behind that? Curious minds want to know

I use racks allot. Gives maximum air flow around the meat. I even use on brisket.

The racks are Bradley smoker racks, just one flipped upside down on the other with a frogmat on it.
