I love fatties! They're so versatile; you can use any kind of ground meat or sausage and fill with whatever you like.

A standard that my family always seems to enjoy and requests the most often is my Italian Fattie. Its simple.

> 2 lbs. Italian Sausage
> 8 oz. Mozzarella or Provolone cheese (shredded or sliced).
> 1/3 - 1/2 cup Roasted Red Pepper
> 16 slices Bacon (about 1 lb.) made into a bacon weave (optional of course).
> Your favorite Rub

Some grilled onions & Marinara sauce served on the side.

Put the sausage in a 1 gallon size plastic zip bag and flatten it out. Slice the sides of the bag open, layer on the cheese & Roasted Red Pepper. Roll it up into a log and seal the ends. Roll the log up into the bacon weave and sprinkle on your favorite rub. Hot-smoke at about 225-275° to an internal temp of 165°.

Slice & serve on buns with the onions & marinara sauce.

Here's an Italian fattie I made. Same as Tent's except I sauted the onions and red bell pepper and put it into the fattie with the marinara.

I love them, but I can't have them as often as I would like. If you havn't tried one, you are really missing out. They truly are delicious and they make a great presentation too.

So, just wanting to know. . . what are the calories, fat content, or just the nutrional views of this fine work of art?

Ahh, that's a good question. This is my take. I get a chuckle almost every time I show a pic of a fattie or describe one to someone who's never had one. Someone always gets that look of horror on their face imagining the fat/calorie & salt content. You know the one; huge eyes, jaw dropping... Why, you can almost hear their arteries groan! lol


First, remember it's a food you eat occasionally, not every day.

Second, it really depends on what's in the fattie. Some fatties are beef, some are pork sausage, I've done some with homemade turkey sausage. The fat content can be controlled by using leaner meat. Same with the salt. I make my own sausage so I control the salt and if I wrap in bacon it's lower sodium bacon to cut back even further.

Third, It's cooked slowly so a whole lot more fat renders off both meat and bacon than cooking in a pan.

Fourth, keep in mind you're not eating the whole thing. Your going to slice it and eat one or maybe two slices, often on a bun. One slice is usually smaller than a typical bratwurst or Italian sausage.

So, you're most likely getting much less fat & calories with a slice of fattie than a typical sausage sandwich.
